Since strawberries are in season, I just had to include this delicious recipe from my friend Nicholle. It truly is one of our favorites!

Nicholle's FAMOUS Strawberry Bread
Makes: 2 loaves (Can be halved)
3 C. all-purpose flour
2 C. sugar
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. ginger
4 eggs, beaten
1 ¼ C. vegetable oil
2 (10 oz.) frozen strawberries, or 4 C. fresh sliced berries, sugared to create juice. (use fresh if you can)
½ C. raisins, dusted with 1 Tbs. flour (optional)
½ C. chopped nuts (optional)
Combine flour, sugar, baking soda, salt, cinnamon, and ginger. Combine eggs, oil, and strawberries in a separate bowl. Add liquid ingredients all at once to dry ingredients. Stir only until dry ingredients are moistened. Then fold in raisins, and nuts. Divide batter equally into two well greased 9X5 inch loaf pans. Bake at 350 degrees for about one hour.
