Chicken Poppy Seed Casserole Recipe

Here's another Family Favorite Recipe. My brother-in-law calls it "The GUT BUSTER!" As you can tell by his description, this recipe is not low in calories, but you might be able to substitute light for the sour cream, cream of chicken soup, and Ritz Crackers. This meal travels well and is a perfect one for a meal delivery. It goes well with green beans or salad.
ENJOY!

Chicken Poppy Seed Casserole

4 cooked and cubed chicken breasts
16 oz. Sour cream
2 cans of Cream of Chicken Soup
(Combine top three ingredients)

6 cups cooked white rice

1 pack of Ritz Crackers
1 cube butter or margarine
one half cup of Poppy Seeds....(Buy in bulk at Henry’s)
(combine these three ingredients and use for topping)

Pour chicken mixture over rice. Top with cracker poppy
